A coffee flavor wheel is a map of the tastes and aromas people find in coffee. Broad families such as fruity, sweet or roasted sit in the middle, and more specific notes like citrus, caramel or smoky sit on the outside. Tasters start at the center (“this tastes sweet”) and work outward (“it’s more like brown sugar than honey”). It gives you words for what you’re already tasting.
This coffee flavor wheel is our own simplified version, built around the notes you’re most likely to find in Philippine coffee. Professional cuppers use far larger wheels with dozens of descriptors, such as the Coffee Taster’s Flavor Wheel from the Specialty Coffee Association, but you don’t need that many to start choosing coffee by taste.
Arabica tends toward floral, fruity and bright notes, which is why our Benguet Arabica shows a floral aroma and lively acidity. Robusta leans toward chocolate, roasted grain and earthy notes with more bitterness. Liberica, sold here as Kapeng Barako, is known for a smoky, woody and intensely aromatic cup.
Higher, cooler farms slow the ripening of coffee cherries, which usually builds more acidity and aromatic complexity. That’s one reason mountain-grown Arabica from the Cordillera tastes so different from lowland Batangas coffee.
Roasting creates most of the flavors on this coffee flavor wheel. Lighter and medium roasts keep more of the bean’s fruity and floral character. Longer, darker roasts caramelise sugars and then develop chocolate, toasted and smoky notes, while lowering acidity. Our dark-roast Robusta and Barako sit on the roasty side of the wheel; our medium-roast Arabica sits on the bright side.
Brewing changes which notes stand out. Pour-over and drip highlight aroma and acidity, while French press and moka pot bring out body, chocolate and smoky depth. Try the same coffee two ways with our Brew Timer & Guide and notice which notes move forward.
No. Tasting notes describe flavors that come naturally from the beans and the roast. Our coffee beans are pure coffee, with nothing added.
Our dark-roast Robusta and Kapeng Barako both finish with dark chocolate notes. CB’s Finest and the Arabica-Robusta Blend lean toward a softer, milk-chocolate and caramel sweetness.
Our medium-roast Benguet Arabica is the brightest of our coffees, with a floral aroma and lively acidity. Brew it as pour-over or drip and drink it black to notice these notes most.
Liberica beans naturally carry a bold, woody character, and a dark roast adds smoky, roasted depth. Together they give Barako its classic strong and smoky cup.
