Affogato Recipe: Espresso Over Vanilla Gelato

Affogato recipe quick answer: Place one or two scoops of vanilla gelato or ice cream in a small cup and pour one 25–30 ml shot of hot espresso over it just before serving. Eat it with a spoon while the gelato softens and the coffee stays aromatic.
Affogato Recipe Ingredients for One Serving
| Ingredient | Starting amount | Notes |
|---|---|---|
| Vanilla gelato or ice cream | 1–2 scoops (80–120 g) | Gelato is dense and slow-melting; ice cream is an easy substitute |
| Espresso | 25–30 ml | Pull a balanced shot immediately before serving |
| Optional garnish | 1–2 g | Dark chocolate, cocoa nibs or a small biscuit |
This affogato recipe uses a short classic format. The classic format is intentionally short. Syrups, liqueurs and whipped cream are optional variations, but too many additions can hide the contrast between hot coffee and cold dairy.
Beans made for espresso and milk drinks
For lattes, cappuccinos and iced coffee, try our Arabica-Robusta Blend or bold Robusta, roasted daily and ground to order for espresso or moka pot.
Shop the Blend →Affogato Recipe Method
- Chill a small glass or dessert cup for a few minutes. This slows melting without freezing the vessel.
- Add the gelato. Use one scoop for a coffee-forward dessert or two for a larger, creamier serving.
- Brew one espresso and serve it immediately. A 1:2 brew ratio is a sensible starting point: for example, 18 g ground coffee to about 36 g espresso, then adjust for your machine and coffee.
- Pour the espresso over the gelato at the table. Eat the first spoonful while the top is still firm, then let the melted gelato and coffee combine.
Choosing coffee for the dessert
Chocolate, caramel and nut notes usually stay present when mixed with vanilla. The Caffeine Brothers Arabica–Robusta Blend is a practical starting point for a fuller espresso base. Dial in the shot before making the dessert: an under-extracted shot can taste sharp, while an over-extracted shot can turn the melted gelato bitter.
For a moka pot, brew a small concentrated coffee and use 25–30 ml. It will not be technically espresso, but the hot-coffee-over-gelato format still works. Do not boil brewed coffee in the gelato cup because high heat makes the dessert melt too quickly.
Affogato Recipe Variations and Portions
- Affogato al cioccolato: Add 5 g dark chocolate shavings after pouring the coffee.
- Affogato with liqueur: Add 10–15 ml amaretto or coffee liqueur only after checking local service and age requirements.
- Dairy-free: Use a coconut- or oat-based frozen dessert and confirm that toppings are dairy-free.
- Small tasting flight: Serve one espresso over separate scoops of vanilla, chocolate and salted caramel. Keep the coffee dose consistent so the ice-cream choice is the variable.
Common mistakes
- Pulling espresso several minutes early and serving it lukewarm.
- Using watery coffee that disappears as the gelato melts.
- Overfilling the cup, which makes the dessert difficult to eat neatly.
- Adding sugar automatically. Vanilla gelato is already sweet, so taste the combination first.
Café costing and service
List gelato yield, espresso dose, garnish, dishwashing and service time in the same cost sheet used for your coffee cost per cup guide. A dessert using one shot can still have a high food cost if scoop size is inconsistent. Weigh the scoop during recipe setup, then give staff a visual portion reference.
Serve the espresso at the table when practical. This makes the hot-and-cold contrast clear and lets guests combine the dessert at the moment of service. If your operation is takeaway, pack the gelato and espresso separately and label the assembly step.
