Noche Buena Coffee Pairings: What to Brew With Ham and Queso de Bola
By Robin Salvador, co-founder, Caffeine Brothers
Last updated: October 14, 2026
Quick answer: For a typical Filipino Noche Buena, pair sweet glazed ham with a dark roast such as Kapeng Barako or Robusta, salty queso de bola with a bright medium roast such as Benguet Arabica, and bibingka or leche flan with a bold coffee served black. Coffee for 8 people costs about ₱92 to ₱117 from a 200 g pouch at our October 14, 2026 prices, or ₱192 if everyone gets a drip bag.
Key takeaways
- DTI’s 2025 Noche Buena price guide covered 256 holiday food items in 14 categories: 129 kept their prices, 95 went up slightly and 6 were rolled back.
- DTI’s sample ₱500 basket from November 2025 had ham at ₱170, spaghetti at ₱78.50, macaroni salad at ₱152.44, fruit salad at ₱98.25 and pandesal at ₱27.75.
- At 10 g of coffee per cup, 8 cups of brewed coffee cost ₱92.40 (Robusta) to ₱116.80 (Arabica) when bought in 200 g pouches.
- EFSA says single doses of up to 200 mg of caffeine raise no safety concerns for healthy adults, but around 100 mg close to bedtime can affect sleep in some people.
- Our flavoured drip bags (Mocha, Vanilla, Hazelnut, Butterscotch, Caramel) are only sold from October 1 to December 23.
Why serve coffee at Noche Buena?
Noche Buena is the Christmas Eve meal most Filipino families share after midnight Mass or at the stroke of midnight. The table is usually heavy and sweet: glazed ham, queso de bola, Filipino-style spaghetti, macaroni salad, fruit salad with cream and rice cakes like bibingka and puto bumbong. Coffee does two jobs at that table. It gives the adults something warm and bitter to balance the sugar, and it keeps people awake long enough to open gifts and talk.
The catch is timing. A cup of coffee at 12:30 AM is a different decision from a cup at 8 AM, so we cover caffeine and sleep further down. If you want the caffeine numbers for each bean, our post on Robusta vs Arabica caffeine lists the published ranges.

The pairings below are our suggestions, based on the roast notes we publish for each coffee: Benguet Arabica is a medium roast with bright acidity, a floral aroma and mild nutty notes; Batangas Robusta is a dark roast, full-bodied and bitter with dark chocolate notes; Kapeng Barako is 100% Liberica, dark roasted, with a pungent aroma and a dark chocolate finish with sweet hints; CB’s Finest is our house blend with a nutty aftertaste that also works with milk. Taste is personal, so treat the table as a starting point.
| Dish | What it tastes like | Coffee to try | Why it works |
|---|---|---|---|
| Glazed ham (hamon) | Sweet, salty, smoky | Kapeng Barako or Robusta, black | The bitter, dark chocolate notes stand up to a sugary glaze |
| Queso de bola | Salty, sharp, slightly nutty | Benguet Arabica, black | Bright acidity refreshes the palate after salty cheese; the nutty finish matches the cheese |
| Filipino-style spaghetti | Sweet tomato sauce, hotdog, cheese | CB’s Finest, black or with a little milk | A balanced cup that does not compete with a sweet sauce |
| Fruit salad with cream | Sweet, creamy, cold | Benguet Arabica, black | Acidity contrasts the cream and condensed milk |
| Bibingka and puto bumbong | Rice, coconut, butter, muscovado | Kapeng Barako, black | A bold cup with sweet hints suits muscovado and coconut |
| Leche flan and fruitcake | Very sweet, caramel, dried fruit | Robusta or CB’s Finest, strong and black | Bitterness balances caramel and candied fruit |
| Pandesal or ensaymada for the kids’ table | Soft, buttery, mildly sweet | Flavoured drip bags for adults who like sweet coffee | Mocha, Hazelnut or Caramel adds dessert flavour without syrup |
Two simple rules sit behind the table. Sweet and fatty dishes need a darker, more bitter cup. Salty and creamy dishes do well with a brighter cup that has some acidity. If you can only brew one coffee for the whole table, CB’s Finest is the safest middle ground. For more ideas on sweets and coffee, see our older post on desserts to have with your coffee.
What does a Noche Buena table cost in the DTI price guide?
The Department of Trade and Industry (DTI) publishes a Noche Buena price guide each year. The 2025 edition was released on November 9, 2025 and covered 256 holiday food items across 14 categories. According to the release, 129 items kept their 2024 prices, 95 had minimal increases and 6 were rolled back. The release does not explain the remaining 26 items. For comparison, the 2024 guide covered 236 SKUs, of which 102 went up, 121 kept their prices and 13 went down, as GMA reported on November 17, 2024.
| Item | Previous price | 2025 guide price | Change |
|---|---|---|---|
| CDO American Style Ham 500 g | ₱174.00 | ₱170.00 | −₱4.00 |
| King Sue Piña Ham 800 g | ₱527.00 | ₱520.00 | −₱7.00 |
| King Sue Piña Ham 1 kg | ₱643.00 | ₱637.00 | −₱6.00 |
| King Sue Sweet Ham 800 g | ₱450.00 | ₱449.00 | −₱1.00 |
| Danes Queso de Bola 500 g | ₱310.00 | ₱300.00 | −₱10.00 |
| Sunshine Sweet Style Spaghetti Sauce 500 g | ₱52.00 | ₱48.50 | −₱3.50 |
In late November 2025, Trade Secretary Cristina Roque defended a ₱500 Noche Buena for a family of four with a simple menu. GMA listed the sample basket from the DTI guide on November 28, 2025. We added the coffee line ourselves to show what brewed coffee adds to the same table.
| Item in the DTI sample basket | Price |
|---|---|
| Christmas ham | ₱170.00 |
| Spaghetti (noodles ₱30, sauce ₱48.50) | ₱78.50 |
| Macaroni salad (macaroni ₱40.95, mayonnaise ₱55, cheese ₱56.60) | ₱152.44 |
| Fruit salad (fruit cocktail ₱61.75, all-purpose cream ₱36.25) | ₱98.25 |
| Pandesal, 10 pieces | ₱27.75 |
| Total of the listed items | ₱526.94 |
| Added by us: 4 cups of Robusta at 10 g each (200 g pouch, ₱231) | ₱46.20 |
DTI usually releases the guide in November, so expect the 2026 edition closer to Christmas. The prices above are 2024 and 2025 figures, not a forecast.
How much does coffee for 8 people add to the bill?
We priced 8 cups of brewed coffee using our own shop prices on October 14, 2026 and a dose of 10 g of ground coffee per cup, the same amount that goes into one of our drip bags. The National Coffee Association’s general rule is 1 to 2 tablespoons of ground coffee for every 6 ounces of water, so 10 g is a medium-strength cup for most mugs.

| Coffee | 200 g pouch | Per cup (200 g) | 400 g pouch | Per cup (400 g) | 8 cups (200 g) |
|---|---|---|---|---|---|
| Batangas Robusta | ₱231 | ₱11.55 | ₱396 | ₱9.90 | ₱92.40 |
| Kapeng Barako | ₱242 | ₱12.10 | ₱417 | ₱10.43 | ₱96.80 |
| CB’s Finest Signature Blend | ₱244 | ₱12.20 | ₱422 | ₱10.55 | ₱97.60 |
| Arabica-Robusta Blend | ₱274 | ₱13.70 | ₱477 | ₱11.93 | ₱109.60 |
| Benguet Arabica | ₱292 | ₱14.60 | ₱512 | ₱12.80 | ₱116.80 |
| Drip bags (box of 10, ₱240) | n/a | ₱24.00 | n/a | n/a | ₱192.00 |
Brewed coffee adds roughly ₱12 to ₱15 per person to Noche Buena when you buy a 200 g pouch, and less with a 400 g pouch. Drip bags cost more per cup but need no coffee maker, and each guest can brew a fresh cup when they want one.
Is midnight coffee a problem for sleep?
For some people, yes. In its 2015 scientific opinion on caffeine, the European Food Safety Authority (EFSA) concluded that single doses of up to 200 mg raise no safety concerns for healthy adults and that up to 400 mg over a day is not likely to harm adults. It also found that caffeine can affect sleep at doses of around 100 mg in some individuals, particularly when taken close to bedtime. For pregnant and breastfeeding women, EFSA puts the safe level at up to 200 mg a day.
Noche Buena happens at bedtime, so plan for it. Serve smaller cups, offer Arabica instead of Robusta (our Robusta is a high-caffeine coffee), or serve the coffee early in the evening with the desserts and switch to tsokolate or salabat after midnight. We do not sell decaf.
How to brew coffee for a big Noche Buena table
- Count cups, not people. Plan one cup per adult at midnight and one more per adult for Christmas morning, at about 10 g each.
- Pick one brewer that suits the crowd. A drip machine or a large French press is easiest for 6 to 10 cups. Our brewing methods comparison lists ratios and times for each.
- Ask for the right grind. We grind for free: coarse for French press, normal for drip machines, fine for moka pot or espresso.
- Brew close to serving time. Make the coffee shortly before the meal so it is fresh when the ham comes out.
- Keep a box of drip bags on the side for guests who want a different coffee, a sweeter flavour or a cup later in the night.
Frequently asked questions
What coffee goes best with Christmas ham?
A dark roast holds up best against a sweet, salty glaze. Kapeng Barako and Batangas Robusta both have a bitter edge and dark chocolate notes that cut through the sugar. If your ham is very sweet, serve the coffee black so the cup does not add more sweetness.
Is it a bad idea to drink coffee at midnight on Christmas Eve?
It depends on the person. EFSA says caffeine doses of around 100 mg can affect sleep in some people, especially close to bedtime. If you plan to sleep soon after Noche Buena, serve smaller cups, choose Arabica over Robusta, or offer the coffee earlier in the evening.
How much ground coffee do I need for 8 cups?
At 10 g per cup, the same amount as one of our drip bags, 8 cups need 80 g of coffee. A 200 g pouch covers 20 cups, so one pouch is enough for Noche Buena and Christmas morning for most families. The National Coffee Association’s general guide is 1 to 2 tablespoons of ground coffee per 6 ounces of water.
Are the flavoured drip bags available after Christmas?
No. Our Mocha, Vanilla, Hazelnut, Butterscotch and Caramel drip bags are sold from October 1 to December 23 only, in assorted boxes of 5 or 10.
